  • 4 tbsp curry paste
  • 1 can (13.5 oz) coconut milk
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp vegetable oil
  • 0.5 tsp salt
  • 0.25 tsp pepper
  • 2 tbsp fresh cilantro, chopped

Preparation
  1. Heat vegetable oil in a large skillet or pot over medium heat, then add chopped onion, minced garlic, and grated ginger. Sauté until the onions are softened, about 3-5 minutes.
