Prepare Chicken
- Season chicken breasts with salt and pepper, then cook in olive oil in a large skillet over medium-high heat for 6-8 minutes per side until cooked through. Remove chicken, let rest, then slice it into strips.
Cook Pasta
- While chicken cooks, bring a large pot of salted water to a boil and cook fettuccine according to package directions until al dente. Drain well, reserving 1/2 cup of pasta water.
Make Alfredo Sauce
- In the same skillet, melt butter over medium heat, then add minced garlic and cook for 1 minute until fragrant. Pour in the heavy cream and bring to a simmer, stirring occasionally.
- Reduce heat to low, then gradually whisk in the grated Parmesan cheese until the sauce is smooth and thickened. Season with salt and pepper to taste.
Combine and Serve
- Add the cooked and drained pasta to the skillet with the Alfredo sauce and toss to coat evenly. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
- Stir in the sliced chicken and garnish with fresh parsley before serving immediately.
Notes
For an extra touch, add a pinch of nutmeg to the Alfredo sauce. You can also customize by adding cooked broccoli or mushrooms. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
