Prepare the Carrots
- Wash, peel, and shred or julienne the carrots using a mandoline, food processor, or julienne peeler.
- Place the prepared carrots into a large mixing bowl.
Add Other Vegetables
- Add the chopped fresh cilantro and thinly sliced red onion to the bowl with the carrots.
Make the Dressing
- In a small separate bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey or maple syrup, minced garlic, salt, and black pepper until well combined.
Combine and Serve
- Pour the dressing over the carrot mixture in the large mixing bowl.
- Toss everything together thoroughly to ensure all ingredients are evenly coated with the dressing.
- Serve immediately for best crispness, or chill for at least 15 minutes to allow the flavors to meld. The salad can be stored in an airtight container in the refrigerator for up to 2-3 days.
Notes
For extra crunch, you can add some chopped nuts like pecans or walnuts. A sprinkle of sesame seeds can also enhance the flavor and texture. Adjust honey/maple syrup to your sweetness preference. If you don't have fresh lemon, bottled lemon juice works, but fresh is always best!
