Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves; set aside.
Mixing
- In a large bowl, combine the pumpkin puree, granulated sugar, vegetable oil, eggs, and vanilla extract, mixing until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- If desired, fold in the chopped nuts or chocolate chips.
Baking
- Pour the batter into the prepared loaf pan and bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
Notes
For an extra touch, sprinkle some coarse sugar on top of the batter before baking for a nice crust. This bread freezes well; wrap slices individually for easy thawing.
