  • 1 cup canned pumpkin puree
  • 1 1/2 cups granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves; set aside.
Mixing
  1. In a large bowl, combine the pumpkin puree, granulated sugar, vegetable oil, eggs, and vanilla extract, mixing until smooth.
  2. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  3. If desired, fold in the chopped nuts or chocolate chips.
Baking
  1. Pour the batter into the prepared loaf pan and bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.

Notes

For an extra touch, sprinkle some coarse sugar on top of the batter before baking for a nice crust. This bread freezes well; wrap slices individually for easy thawing.
