Pumpkin Bars
- Preheat your oven to 350°F (175°C) and grease a 15x10x1-inch baking pan.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
- In a large bowl, beat the eggs, granulated sugar, and vegetable oil until well combined, then stir in the canned pumpkin.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the pumpkin bars cool completely on a wire rack before frosting.
Cream Cheese Frosting
- In a medium bowl, beat the softened cream cheese and butter until smooth and creamy.
- Gradually add the confectioners' sugar, beating until well incorporated, then stir in the vanilla extract.
- Once the pumpkin bars are completely cool, spread the cream cheese frosting evenly over them, then cut into squares and serve.
Notes
For best results, make sure your cream cheese and butter are at room temperature for a smooth frosting. These pumpkin bars can be stored in an airtight container in the refrigerator for up to 3 days.
