  • 2 tbsp fresh dill chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

Preparation
  1. Wash and peel the potatoes, then cut them into 1-inch cubes.
  2. Place the potato cubes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil, then reduce heat and simmer until tender, about 15-20 minutes.
Assembly
  1. Drain the cooked potatoes and let them cool slightly. In a large bowl, combine the cooled potatoes, mayonnaise, chopped celery, diced red onion, Dijon mustard, apple cider vinegar, fresh dill, salt, and black pepper.
  2. Gently mix all ingredients until the potatoes are evenly coated. Be careful not to mash the potatoes.
  3. Cover the bowl and refrigerate the potato salad for at least 1 hour before serving to allow the flavors to meld.
