Make the filling
- In a large saucepan, melt butter over medium heat, then whisk in flour and cook for 1 minute.
- Gradually add chicken broth and milk, stirring constantly until the mixture thickens.
- Stir in shredded chicken, mixed vegetables, salt, pepper, and thyme; remove from heat.
Assemble the pie
- Preheat oven to 400°F (200°C) and place one pie crust in a 9-inch pie plate.
- Pour the chicken and vegetable filling into the pie crust, spreading evenly.
- Cover with the second pie crust, crimp the edges to seal, and cut several slits in the top for venting.
Bake the pie
- Brush the top crust with the beaten egg wash.
- Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbling.
Cool and serve
- Let the chicken pot pie cool for at least 10-15 minutes before slicing and serving to allow the filling to set.
Notes
