  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 2 large carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 2 bay leaves
  • 1.5 lbs potatoes, peeled and cubed
  • 1 cup frozen peas

Method
 

Preparation
  1. Pat the beef dry with paper towels; then, in a large bowl, toss the beef with flour, salt, and pepper until evenly coated.
  2. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
  3. Sear the beef in batches until browned on all sides, then remove and set aside.
  4. Add the chopped onion, carrots, and celery to the pot, cooking until softened, about 5-7 minutes.
  5. Stir in the minced garlic and cook for another minute until fragrant.
Cooking
  1. Return the beef to the pot, then pour in the beef broth, scraping up any browned bits from the bottom.
  2. Stir in the tomato paste, Worcestershire sauce, dried thyme, and bay leaves.
  3. Bring the stew to a simmer, then reduce heat to low, cover, and cook for 1.5 to 2 hours, or until the beef is tender.
  4. Add the cubed potatoes to the pot and continue to simmer for 20-30 minutes, or until the potatoes are tender.
  5. Stir in the frozen peas and cook for 5 more minutes.
  6. Remove the bay leaves before serving.

Notes

For a thicker stew, you can make a slurry of 1 tablespoon of cornstarch mixed with 2 tablespoons of cold water and stir it into the simmering stew during the last 10 minutes of cooking. Adjust seasoning to taste after the stew has finished cooking.
