Ingredients
  

Vegetables
  • 2 medium Carrots chopped
  • 2 Celery stalks chopped
  • 2 medium Potatoes peeled and diced
  • 1 medium Onion chopped
  • 1 cup Green beans trimmed and cut
  • 1 can Canned diced tomatoes (14.5 oz) undrained
Liquids & Seasoning
  • 6 cups Vegetable broth
  • 2 cups Water
  • 2 cloves Garlic minced
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried thyme
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Method
 

Preparation
  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped carrots, celery, and onion to the pot and sauté for 5-7 minutes until softened.
  3. Stir in the minced garlic and cook for another minute until fragrant.
Cooking the Soup
  1. Add the diced potatoes, green beans, canned diced tomatoes (undrained), vegetable broth, water, dried thyme, bay leaf, salt, and black pepper to the pot.
  2. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 30-35 minutes, or until the vegetables are tender.
Serving
  1. Remove the bay leaf before serving. Taste and adjust seasonings as needed.
  2. Ladle the hearty vegetable soup into bowls and serve warm.

Notes

For extra flavor, you can add a pinch of red pepper flakes for a subtle kick. This soup freezes well, so feel free to make a larger batch for future meals.
