Protein
  • 00.5 can Chickpeas, rinsed and drained 15-ounce can
  • 4 ounces Grilled chicken or tofu, diced
Healthy Fats & Flavor
  • 0.5 Avocado, diced
  • 2 tablespoons Feta cheese, crumbled
  • 1 tablespoon Fresh herbs e.g., parsley, mint, or basil, chopped
Dressing
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Method
 

Preparation
  1. If not already cooked, prepare your chosen grain according to package instructions.
  2. While the grain cooks, chop all your vegetables and desired protein.

Assembly
