For the Salad
  • 6 cups romaine lettuce chopped
  • 2 cups cooked chicken breast diced
  • 8 slices bacon cooked and crumbled
  • 4 hard-boiled eggs chopped
  • 1 avocado diced
  • 1 cup tomatoes diced
  • 4 ounces blue cheese crumbled
For the Vinaigrette
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 3 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

Preparation
  1. In a large salad bowl, arrange the chopped romaine lettuce as the base.
  2. Carefully arrange rows of diced chicken, crumbled bacon, chopped hard-boiled eggs, diced avocado, diced tomatoes, and crumbled blue cheese over the lettuce.
Making the Vinaigrette
  1. In a small bowl, whisk together the red wine vinegar, Dijon mustard, salt, and black pepper.
  2. Gradually drizzle in the olive oil while continuously whisking until the vinaigrette is well emulsified.
Serving
  1. Just before serving, drizzle the vinaigrette over the salad.

Notes

For an extra touch of flavor, you can marinate the chicken breast before cooking. Adjust the amount of blue cheese to your preference.
