Preparation
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt; set aside.
Making the Dough
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the molasses, egg, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined and no streaks of flour remain.
Baking the Cookies
- Place the remaining 1/4 cup of granulated sugar in a shallow bowl.
- Roll the cookie dough into 1-inch balls, then roll each ball in the granulated sugar to coat evenly.
- Arrange the coated cookie dough balls 2 inches apart on the prepared baking sheet.
- Bake for 8-10 minutes, or until the edges are set and the centers are still soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra chewiness, underbake the cookies slightly. These cookies store well in an airtight container at room temperature for up to 5 days.
