Pasta Salad
  • 1 pound Rotini pasta
  • 2 cups Cherry tomatoes, halved
  • 1 Cucumber, diced
  • 0.5 cup Red onion, finely diced
  • 1 cup Bell peppers (any color), diced
  • 0.5 cup Black olives, sliced
  • 0.5 cup Feta cheese, crumbled
Dressing
  • 0.5 cup Olive oil
  • 0.25 cup Red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Dried oregano

Method
 

Preparation
  1. Cook rotini pasta according to package directions until al dente, then drain and rinse with cold water to stop cooking and cool it down.
  2. In a large bowl, combine the cooked and cooled pasta with halved cherry tomatoes, diced cucumber, finely diced red onion, diced bell peppers, sliced black olives, and crumbled feta cheese.
Dressing
  1. In a separate small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, and dried oregano.
  2. Pour the dressing over the pasta and vegetable mixture, tossing gently to ensure everything is evenly coated.
Serve
  1. Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld and chill thoroughly.
