  • 3 cups Cooked white rice cold, day-old rice is best
  • 2 large Eggs lightly beaten
  • 2 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 2 tbsp Vegetable oil
  • 2 cloves Garlic minced
  • 1 tbsp Ginger grated
  • 0.5 cup Carrots diced
  • 0.5 cup Peas
  • 2 stalks Green onions sliced, for garnish

Method
 

Preparation
  1. Prepare your ingredients by mincing garlic, grating ginger, dicing carrots, and slicing green onions.
  2. In a small bowl, whisk the eggs and set aside.
  3. In another small bowl, combine the soy sauce and sesame oil.
Cooking
  1. Heat vegetable oil in a large wok or skillet over medium-high heat.
  2. Add the whisked eggs and scramble them until cooked through, then remove from the wok and set aside.
  3. Add a bit more oil to the wok if needed, then add the minced garlic, grated ginger, and diced carrots; stir-fry for 2-3 minutes until fragrant and slightly tender.
  4. Add the cold rice to the wok, breaking up any clumps with your spatula, and stir-fry for 3-5 minutes until heated through and slightly toasted.
  5. Pour the soy sauce mixture over the rice, add the peas and scrambled eggs back into the wok, and stir well to combine.
  6. Continue to stir-fry for another 1-2 minutes until everything is evenly heated and coated.
Serving
  1. Garnish with sliced green onions and serve hot.

Notes

For best results, use day-old, cold rice as it is less sticky and fries better. You can add cooked chicken, shrimp, or tofu for extra protein. Adjust soy sauce to your taste.
