Preparation
- Prepare your ingredients by mincing garlic, grating ginger, dicing carrots, and slicing green onions.
- In a small bowl, whisk the eggs and set aside.
- In another small bowl, combine the soy sauce and sesame oil.
Cooking
- Heat vegetable oil in a large wok or skillet over medium-high heat.
- Add the whisked eggs and scramble them until cooked through, then remove from the wok and set aside.
- Add a bit more oil to the wok if needed, then add the minced garlic, grated ginger, and diced carrots; stir-fry for 2-3 minutes until fragrant and slightly tender.
- Add the cold rice to the wok, breaking up any clumps with your spatula, and stir-fry for 3-5 minutes until heated through and slightly toasted.
- Pour the soy sauce mixture over the rice, add the peas and scrambled eggs back into the wok, and stir well to combine.
- Continue to stir-fry for another 1-2 minutes until everything is evenly heated and coated.
Serving
- Garnish with sliced green onions and serve hot.
Notes
For best results, use day-old, cold rice as it is less sticky and fries better. You can add cooked chicken, shrimp, or tofu for extra protein. Adjust soy sauce to your taste.
