Cornbread
  • 1 package cornbread mix (8.5 ounce)
Dressing
  • 0.5 cup butter
  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 4 cups chicken broth
  • 2 eggs, beaten
  • 1 teaspoon sage
  • 0.5 teaspoon thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cups dried bread crumbs
  • 0.5 cup milk
  • 0.5 cup pitted green olives, sliced (optional)
  • 0.5 cup chopped pecans (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. Prepare the cornbread according to package directions, then let it cool and crumble it into a large bowl.
Making the Dressing
  1. Melt butter in a large skillet over medium heat, then sauté celery and onion until softened, about 5-7 minutes.
  2. Add chicken broth to the skillet and bring to a simmer, then remove from heat.
  3. In the bowl with crumbled cornbread, combine the beaten eggs, sage, thyme, salt, and pepper.
  4. Pour the warm broth mixture over the cornbread mixture, stirring until well combined.
  5. Stir in the dried bread crumbs, milk, and optional olives and pecans.
  6. Transfer the mixture to the prepared baking dish.
Baking
  1. Bake for 50-60 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.
  2. Let the dressing rest for 10 minutes before serving, then garnish with fresh parsley if desired.

Notes

For extra flavor, you can add cooked sausage or oysters to the dressing. If you prefer a moister dressing, add an additional 1/2 cup of chicken broth.
