Preparation
- Wash and chop all seasonal vegetables into bite-sized pieces.
- Mince the garlic and roughly chop the fresh herbs. If using, prepare any additional ingredients like cooked quinoa, rinsed chickpeas, or grilled chicken.
Cooking
- In a large skillet or on a baking sheet, toss the chopped vegetables with olive oil, minced garlic, salt, and pepper.
- Roast in a preheated oven at 400°F (200°C) for 15-20 minutes, or sauté in a skillet over medium-high heat until tender-crisp.
- Remove from heat and stir in fresh herbs, lemon juice, and zest. If using, add cooked grains, chickpeas, or grilled chicken.
Serving
