Prepare the Dough
- In a large bowl, whisk together the flour and salt.

Make the Chicken Filling
- Cook chicken breasts in boiling water until cooked through, then shred them.

- Stir in cumin, paprika, and oregano, cooking for another minute until fragrant.
- Add shredded chicken, tomato sauce, and chicken broth, simmering for 10-15 minutes until the sauce thickens.
- Season the filling with salt and black pepper to taste and let it cool completely.
Assemble and Bake the Empanadas
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness, then cut out 6-inch circles.
- Place a spoonful of chicken filling in the center of each dough circle, being careful not to overfill.
- Fold the dough over the filling to form a half-moon shape, pressing the edges to seal.
- Crimp the edges with a fork or create a decorative rope pattern to ensure a tight seal.
- Whisk the egg with water to make an egg wash, then brush it over the tops of the empanadas.
- Bake for 20-25 minutes, or until the empanadas are golden brown and cooked through.
Notes
For extra flavor, consider adding a pinch of smoked paprika to the chicken filling. You can also customize the filling with other vegetables like corn or peas. These empanadas are best served warm, either on their own or with a side of salsa or sour cream. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven.
