Cooking Steps
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat, then add the shrimp and cook until pink and opaque (about 2-3 minutes per side).
- Remove shrimp from the skillet and set aside, then add the remaining 1 tablespoon of vegetable oil to the skillet.
- Add minced garlic and grated ginger to the skillet and sauté for 30 seconds until fragrant.
- Add the frozen mixed vegetables and cook for 3-5 minutes until tender-crisp.
- Push the vegetables to one side of the skillet and crack the eggs into the other side; scramble the eggs until fully cooked.
- Add the cold rice to the skillet and break up any clumps with a spatula, then stir in the cooked shrimp, soy sauce, and sesame oil.
- Stir-fry for 2-3 minutes, ensuring all ingredients are well combined and the rice is heated through.
- Garnish with sliced green onions and serve hot.
Notes
For best results, use day-old, cold rice. This prevents the fried rice from becoming sticky and allows for a better texture. Feel free to adjust the amount of soy sauce to your preference, and add a pinch of white pepper for an authentic touch.
