  • 1 lb Shrimp peeled and deveined
  • 2 large Eggs
  • 1 cup Frozen Mixed Vegetables
  • 3 tbsp Soy Sauce
  • 1 tbsp Sesame Oil
  • 2 cloves Garlic minced
  • 1 tsp Ginger grated
  • 2 Green Onions sliced
  • 2 tbsp Vegetable Oil

Cooking Steps
  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat, then add the shrimp and cook until pink and opaque (about 2-3 minutes per side).
  2. Remove shrimp from the skillet and set aside, then add the remaining 1 tablespoon of vegetable oil to the skillet.
  3. Add minced garlic and grated ginger to the skillet and sauté for 30 seconds until fragrant.
  4. Add the frozen mixed vegetables and cook for 3-5 minutes until tender-crisp.
  5. Push the vegetables to one side of the skillet and crack the eggs into the other side; scramble the eggs until fully cooked.
  6. Add the cold rice to the skillet and break up any clumps with a spatula, then stir in the cooked shrimp, soy sauce, and sesame oil.
  7. Stir-fry for 2-3 minutes, ensuring all ingredients are well combined and the rice is heated through.
  8. Garnish with sliced green onions and serve hot.

Notes

For best results, use day-old, cold rice. This prevents the fried rice from becoming sticky and allows for a better texture. Feel free to adjust the amount of soy sauce to your preference, and add a pinch of white pepper for an authentic touch.
