Ingredients

Dough
  • 2 cups all-purpose flour
  • 2.25 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup milk, warm
  • 1/4 cup unsalted butter, melted
  • 1 large egg
Filling
  • 1/2 cup light brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, softened
Icing
  • 1 cup powdered sugar
  • 2 tablespoons cream cheese, softened
  • 1-2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Equipment

  • Large bowl
  • Small bowl
  • Whisk
  • Measuring cups and spoons
  • Rolling pin
  • Sharp knife or dental floss
  • 8x8 inch baking dish

Method

Prepare the Dough
  1. In a large bowl, combine the flour, yeast, sugar, and salt, then set aside.
  2. In a separate bowl, whisk together the warm milk, melted butter, and egg.
  3. Pour the wet ingredients into the dry ingredients and mix until a shaggy dough forms, then knead for 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
Assemble the Rolls
  1. Punch down the risen dough and roll it out on a lightly floured surface into a 12x9 inch rectangle.
  2. In a small bowl, mix together the brown sugar and cinnamon for the filling.
  3. Spread the softened butter evenly over the dough, then sprinkle the cinnamon-sugar mixture over the butter.
  4. Tightly roll the dough from the long side, then cut the roll into 3 equal pieces using a sharp knife or dental floss.
Bake the Rolls
  1. Place the cinnamon rolls in a lightly greased 8x8 inch baking dish, leaving some space between them.
  2. Cover the dish and let the rolls rise again for 30 minutes, or until puffy.
  3. Preheat your oven to 375°F (190°C) while the rolls are rising.
  4. Bake for 20-25 minutes, or until the rolls are golden brown and cooked through.
Prepare and Apply the Icing
  1. While the rolls are baking, whisk together the powdered sugar, softened cream cheese, milk, and vanilla extract until smooth.
  2. Once the cinnamon rolls are out of the oven, allow them to cool slightly before spreading the icing generously over the warm rolls.

Notes

For extra fluffy rolls, ensure your milk is warm (around 105-115°F or 40-46°C) to activate the yeast properly. Do not overheat, as it can kill the yeast.
