Preparation
- In a medium bowl, whisk together the olive oil, lemon juice, soy sauce, honey, minced garlic, dried oregano, and black pepper to create the marinade.
- Add the chicken cubes to the marinade, ensuring they are well coated, then cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to meld.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning on the grill. While the chicken is marinating, preheat your grill to medium-high heat.
Assembling and Grilling
- Thread the marinated chicken pieces alternately with the bell peppers, red onion, cherry tomatoes, and zucchini onto the soaked skewers.
- Place the assembled kabobs on the preheated grill and cook for 15-20 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender-crisp with nice grill marks.
- Remove the kabobs from the grill and let them rest for a few minutes before serving. Serve hot and enjoy your delicious homemade chicken kabobs!
Notes
For extra flavor, you can add a pinch of red pepper flakes to the marinade for a bit of heat. Ensure chicken is cooked to an internal temperature of 165°F (74°C). These kabobs can also be baked in the oven at 400°F (200°C) for 20-25 minutes, or until cooked through, if grilling is not an option.
