Ingredients
  

For the Marinade
  • 1/4 cup Olive oil
  • 2 tbsp Lemon juice
  • 1 tbsp Soy sauce
  • 1 tbsp Honey
  • 2 cloves Minced garlic
  • 1 tsp Dried oregano
  • 1/2 tsp Black pepper
For the Kabobs
  • 1.5 lbs Boneless, skinless chicken breasts cut into 1-inch cubes
  • 2 large Bell peppers (any color), cut into 1-inch pieces
  • 1 medium Red onion cut into 1-inch pieces
  • 1 pint Cherry tomatoes
  • 1 medium Zucchini cut into 1-inch pieces
  • 12 Wooden skewers (if using, soak in water for 30 minutes)

Method
 

Preparation
  1. In a medium bowl, whisk together the olive oil, lemon juice, soy sauce, honey, minced garlic, dried oregano, and black pepper to create the marinade.
  2. Add the chicken cubes to the marinade, ensuring they are well coated, then cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to meld.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning on the grill. While the chicken is marinating, preheat your grill to medium-high heat.
Assembling and Grilling
  1. Thread the marinated chicken pieces alternately with the bell peppers, red onion, cherry tomatoes, and zucchini onto the soaked skewers.
  2. Place the assembled kabobs on the preheated grill and cook for 15-20 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender-crisp with nice grill marks.
  3. Remove the kabobs from the grill and let them rest for a few minutes before serving. Serve hot and enjoy your delicious homemade chicken kabobs!

Notes

For extra flavor, you can add a pinch of red pepper flakes to the marinade for a bit of heat. Ensure chicken is cooked to an internal temperature of 165°F (74°C). These kabobs can also be baked in the oven at 400°F (200°C) for 20-25 minutes, or until cooked through, if grilling is not an option.
