Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon; set aside.
Mixing the Dough
  1. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
  4. Fold in the rolled oats and any optional add-ins like raisins or chocolate chips.
Baking
  1. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set but still soft.
  3. Remove from the oven and let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
