Classic Hummus
- Combine chickpeas, tahini, lemon juice, garlic, and salt in a food processor, blending until smooth.
- While blending, gradually add ice water one tablespoon at a time until the hummus reaches a creamy consistency.
- Transfer to a serving bowl, drizzle with olive oil, and sprinkle with paprika before serving.
Roasted Red Pepper Hummus
- Prepare the classic hummus base as described above.
- Add drained roasted red peppers to the food processor with the classic hummus ingredients and blend until smooth and well combined.
Garlic Confit Hummus
- To make garlic confit, place peeled garlic cloves in a small saucepan, cover with olive oil, and simmer on low heat for 20-25 minutes until tender and golden.
- Allow the garlic confit to cool, then drain the oil (reserve the oil for other uses).
- Prepare the classic hummus base, adding the confit garlic cloves to the food processor with the other ingredients before blending.
Spicy Chipotle Hummus
- Prepare the classic hummus base as described above.
- Add chipotle in adobo sauce to the food processor with the classic hummus ingredients and blend until thoroughly combined.
Green Goddess Hummus
- Prepare the classic hummus base as described above.
- Add fresh parsley, chives, dill, and lemon zest to the food processor with the classic hummus ingredients and blend until the herbs are finely chopped and incorporated.
Notes
For extra smooth hummus, remove the skins from the chickpeas before blending. Adjust lemon juice and salt to taste in all variations. These hummuses are great for dipping with pita bread, vegetables, or as a spread in sandwiches and wraps.
