Ingredients

Main Ingredients
  • 4 large chicken breasts
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1/2 cup sun-dried tomatoes packed in oil, drained and chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • 2 cups fresh spinach
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes optional

Equipment

  • Large Skillet
  • Tongs
  • Whisk

Method

Cooking Steps
  1. Season chicken breasts with salt and pepper, then sear in a large skillet with olive oil over medium-high heat for 3-5 minutes per side until golden brown. Remove the chicken from the pan and set aside.
  2. Add minced garlic and chopped sun-dried tomatoes to the same skillet, sautéing for 1-2 minutes until fragrant.
  3. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan, then stir in the heavy cream and grated Parmesan cheese until the sauce is smooth and slightly bubbling.
  4. Return the seared chicken breasts to the skillet, nestled in the sauce, and simmer for 10-15 minutes or until the chicken is cooked through and the sauce has thickened to your desired consistency. Stir in the fresh spinach until it wilts, then serve immediately.
