  • 1 lb lean ground turkey
  • 1 packet taco seasoning
  • 0.5 cup water
  • 4 cups chopped romaine lettuce
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn
  • 0.5 cup pico de gallo or salsa
  • 1 diced avocado
  • 0.25 cup plain Greek yogurt
  • 1 lime

Method
 

Preparation
  1. Brown the ground turkey in a large skillet until cooked through; drain any excess fat.

  3. In two separate bowls, distribute the chopped romaine lettuce as a base.
  4. Top the lettuce with the seasoned ground turkey, black beans, corn, pico de gallo, and diced avocado.
  5. Garnish each bowl with a dollop of Greek yogurt and a squeeze of fresh lime juice before serving.
