Ingredients
  

Pasta
  • 200 g linguine or spaghetti
Sauce
  • 1 cup ricotta cheese
  • 1 lemon, juiced and zested
  • 0.5 cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste
  • 0.25 cup reserved pasta water or as needed

Method
 

Preparation
  1. Cook pasta according to package directions, reserving about 1/2 cup of pasta water before draining.
Combine
  1. In a large bowl, whisk together ricotta cheese, lemon juice, lemon zest, Parmesan cheese, olive oil, minced garlic, salt, and pepper.
  2. Add the cooked pasta to the ricotta mixture and toss to coat evenly. If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency is reached.
Serve
  1. Serve immediately, garnished with extra Parmesan cheese and fresh basil if desired.

Notes

For an extra burst of flavor, add fresh basil or chopped parsley. You can also toast some pine nuts and sprinkle them on top for added crunch.
