  1. Grate the cucumber and then squeeze out as much excess water as possible using a clean kitchen towel or paper towels.
  2. In a medium bowl, combine the squeezed cucumber with the Greek yogurt, minced garlic, chopped fresh dill, and optional chopped fresh mint.
  3. Add the lemon juice, olive oil, salt, and black pepper to the bowl.
  4. Stir all the ingredients together until well combined and smooth.
  5. Taste the Tzatziki sauce and adjust seasonings as needed, adding more salt, pepper, or lemon juice to your preference.
  6. Cover the bowl and refrigerate the Tzatziki sauce for at least 30 minutes to allow the flavors to meld and chill.

Notes
