For the Filling
  • 2 cups chicken breast cooked and shredded
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 cup frozen peas
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh thyme chopped
For the Crust
  • 2 pie crusts refrigerated, 9-inch
  • 1 egg beaten
  • 1 tbsp water
  • 1 tsp sesame seeds for sprinkling (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a 9-inch pie dish.
  2. In a large saucepan, melt butter over medium heat, then add diced carrots and celery, cooking until slightly tender.
  3. Stir in flour and cook for one minute, then gradually whisk in chicken broth and milk until the mixture thickens.
Assembly
  1. Remove the saucepan from heat and mix in shredded chicken, frozen peas, salt, pepper, and fresh thyme.
  2. Line the pie dish with one pie crust, pour the chicken mixture in, and top with the second crust; crimp the edges to seal.
  3. Cut several slits in the top crust, brush with an egg wash (beaten egg and water), and sprinkle with sesame seeds if desired.
Baking
  1. Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
  2. Let the chicken pot pie cool for 10-15 minutes before serving to allow the filling to set.

Notes

For a richer flavor, consider using homemade chicken broth. You can also add other vegetables like potatoes or corn to the filling. If you don't have fresh thyme, 1/2 teaspoon of dried thyme can be substituted. This recipe also works well with turkey leftovers.
