Method
Preparing the Blackberries
- Gently wash and dry the fresh blackberries.
- In a large bowl, combine the blackberries with 3/4 cup of granulated sugar, 2 tablespoons of flour, and lemon juice. Toss gently to coat and set aside while you prepare the topping.
Making the Topping
- In a separate bowl, whisk together 1 cup of flour, 1/2 cup of granulated sugar, baking powder, and salt.
- Pour in the milk and melted butter; stir everything together until just combined, forming a thick batter.
- Do not overmix; a few lumps are fine.
Assembling and Baking the Cobbler
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
- Pour the blackberry mixture into the bottom of the prepared baking dish.
- Spoon the topping mixture over the berries, spreading it gently to cover as much of the fruit as possible.
- Bake for 35-45 minutes, or until the topping is golden brown and the fruit is bubbly.
- Let the cobbler cool slightly before serving.
Notes
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat. You can adjust the sugar content based on the sweetness of your blackberries. If using frozen blackberries, do not thaw them beforehand; simply add them to the mixture and increase baking time by 5-10 minutes if needed.
