Preparation
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the peanut butter, egg, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Roll the dough into 3 equal-sized balls and place them on the prepared baking sheet, then flatten each with a fork to create a crisscross pattern.
Baking
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra peanut butter flavor, you can add a tablespoon of chopped peanuts to the dough. Be careful not to overbake, as these cookies can dry out quickly. Store in an airtight container at room temperature for up to 3 days.
