Ingredients

  • 1 kg ripe tomatoes roughly chopped
  • 1 cucumber peeled and roughly chopped
  • 1 red bell pepper seeded and roughly chopped
  • 1 garlic clove minced
  • 0.5 red onion roughly chopped
  • 60 ml extra virgin olive oil
  • 30 ml red wine vinegar
  • 120 ml cold water
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Method
 

Preparation
  1. Combine roughly chopped tomatoes, peeled and chopped cucumber, seeded and chopped red bell pepper, minced garlic, and roughly chopped red onion in a large bowl. Add extra virgin olive oil, red wine vinegar, cold water, salt, and black pepper to the vegetables.
  2. Transfer the mixture to a blender and blend until completely smooth. If desired, pass the gazpacho through a fine-mesh sieve to remove any remaining pulp or seeds for a smoother consistency.
Chilling
  1. Pour the blended gazpacho into a pitcher or a sealed container and refrigerate for at least 2 hours, or until thoroughly chilled. This allows the flavors to meld and intensify.
Serving
  1. Before serving, taste and adjust seasoning if necessary. Serve the gazpacho cold, garnished with a drizzle of olive oil, croutons, or finely diced vegetables.

Notes

For an extra kick, add a pinch of smoked paprika or a dash of hot sauce to the gazpacho. You can also experiment with different vegetable garnishes like finely diced avocado or bell pepper.
