Method
 

Preparation
  1. Slice the onions thinly and melt butter in a large pot or Dutch oven over medium heat.
  2. Add the sliced onions to the pot and cook for 30-40 minutes, stirring occasionally, until deeply caramelized and golden brown.
  3. Sprinkle flour over the caramelized onions and stir for 2 minutes.
  4. Pour in the white wine, scraping any browned bits from the bottom of the pot, and cook for 5 minutes until reduced.
  5. Add beef broth, salt, and pepper; bring to a simmer and cook for at least 20 minutes.
  6. While the soup simmers, toast baguette slices until golden brown and preheat your broiler.
  7. Ladle the hot soup into oven-safe bowls, place a toasted baguette slice on top of each, and sprinkle with Gruyere cheese.
  8. Broil for 2-3 minutes, watching carefully, until the cheese is bubbly and golden brown.

Notes

Caramelizing the onions slowly is crucial for developing the rich flavor of the soup. Do not rush this step!
