Cooking Instructions
- Cook pasta according to package directions, then drain and set aside, reserving a bit of the pasta water.
- Heat olive oil in a large skillet over medium-high heat, add sliced chicken and cook until browned and cooked through; then remove chicken and set it aside.
- Add minced garlic to the skillet and sauté for 1 minute until fragrant, then stir in sun-dried tomatoes and cook for another minute.
- Pour in the heavy cream and bring it to a simmer, then reduce heat and stir in Parmesan cheese until the sauce is smooth.
- Add spinach to the sauce and cook until it wilts, then return the cooked chicken and pasta to the skillet, tossing to combine.
- Add a splash of reserved pasta water if needed to reach your desired consistency, then season with salt and pepper to taste before serving hot.
Notes
For extra flavor, you can add a pinch of red pepper flakes with the garlic. Fresh basil also makes a great garnish.
