  • 250 g pasta
  • 2 chicken breast sliced
  • 200 ml heaving cream
  • 1/2 cup sun-dried tomatoes
  • 2 cups spinach
  • 1/4 cup Parmesan cheese grated
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • salt to taste
  • black pepper to taste

Method
 

Cooking Instructions
  1. Cook pasta according to package directions, then drain and set aside, reserving a bit of the pasta water.
  2. Heat olive oil in a large skillet over medium-high heat, add sliced chicken and cook until browned and cooked through; then remove chicken and set it aside.
  3. Add minced garlic to the skillet and sauté for 1 minute until fragrant, then stir in sun-dried tomatoes and cook for another minute.
  4. Pour in the heavy cream and bring it to a simmer, then reduce heat and stir in Parmesan cheese until the sauce is smooth.
  5. Add spinach to the sauce and cook until it wilts, then return the cooked chicken and pasta to the skillet, tossing to combine.
  6. Add a splash of reserved pasta water if needed to reach your desired consistency, then season with salt and pepper to taste before serving hot.

Notes

For extra flavor, you can add a pinch of red pepper flakes with the garlic. Fresh basil also makes a great garnish.
