Preparation
- Peel and dice the potatoes into small, uniform pieces to ensure quick cooking.
Cooking the Soup
- In a large pot, melt the butter over medium heat, then whisk in the flour to create a roux, cooking for 1 minute.
- Gradually add the chicken broth, whisking constantly to prevent lumps, then bring the mixture to a simmer.
- Add the diced potatoes to the pot, cover, and cook for about 10-12 minutes, or until the potatoes are tender when pierced with a fork.
- Stir in the milk and heavy cream, heating gently until warmed through; do not boil.
- Season with salt and black pepper to taste, adding more if needed.

Notes
