  • 4 cups chicken broth
  • 1 cup milk
  • 0.5 cup heavy cream
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup cheddar cheese shredded, for garnish

  • 2 tbsp bacon bits
  • 1 tbsp green onions chopped

  • fresh parsley chopped

Method
 

Preparation
  1. Peel and dice the potatoes into small, uniform pieces to ensure quick cooking.
Cooking the Soup
  1. In a large pot, melt the butter over medium heat, then whisk in the flour to create a roux, cooking for 1 minute.
  2. Gradually add the chicken broth, whisking constantly to prevent lumps, then bring the mixture to a simmer.
  3. Add the diced potatoes to the pot, cover, and cook for about 10-12 minutes, or until the potatoes are tender when pierced with a fork.
  4. Stir in the milk and heavy cream, heating gently until warmed through; do not boil.
  5. Season with salt and black pepper to taste, adding more if needed.
Serving
  1. Ladle the hot soup into bowls and garnish with shredded cheddar cheese, bacon bits, green onions, and fresh parsley if desired.

Notes

For a thicker soup, you can mash some of the potatoes directly in the pot. Adjust seasoning to your preference.
