Prepare Noodles

Prepare Vegetables
- Julienne the cucumber and carrots, thinly slice the red bell pepper, and slice the green onions.
Make Dressing
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, grated fresh ginger, and minced garlic.
Combine
- In a large bowl, combine the cooked noodles, all the prepared vegetables, and pour the dressing over everything. Toss well to ensure all ingredients are evenly coated.
Chill and Serve
- Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld, then serve it chilled.
Notes
For an extra boost of protein, consider adding grilled chicken, shrimp, or tofu. You can also customize the vegetables based on what's in season or your preferences, such as adding edamame, red cabbage, or bean sprouts.
