- Cook the chicken: Place chicken breasts in a large pot with chicken broth, bring to a boil, then reduce heat and simmer until cooked through. Remove chicken, shred, and set aside, reserving the broth.
- Prepare the dumpling dough: In a bowl, whisk together flour, baking powder, salt, and pepper. Gradually add milk and melted butter, mixing until a soft dough forms.
- Cook the dumplings: Bring the reserved broth back to a gentle simmer. Drop spoonfuls of dumpling dough into the simmering broth, making sure not to overcrowd the pot. Cook for 10-15 minutes, or until dumplings are cooked through and fluffy.
- Combine and serve: Stir the shredded chicken back into the pot with the dumplings. If using, add chopped carrots, celery, and onion and cook until tender. Season with additional salt and pepper to taste.
- Garnish and enjoy: Serve hot, optionally garnished with fresh parsley or chives.
Notes
For extra flavor, you can add herbs like thyme or rosemary to the broth while the chicken is cooking. Adjust the consistency of the dumplings by adding a little more flour if the dough is too sticky, or a splash more milk if it's too dry.
