  • 2 cups flour
  • 1/2 cup water
  • 1/2 teaspoon salt
For the Filling
  • 1 head cabbage finely chopped
  • 1/2 pound ground pork
  • 1 medium onion finely chopped
  • 1 tablespoon ginger grated
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For Serving
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon chili oil
  • green onions chopped for garnish

Method
 

Prepare the Dough
  1. Combine flour, water, and salt in a large bowl and mix until a shaggy dough forms.
  2. Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic; then cover and let it rest.
Prepare the Filling
  1. In a large bowl, combine the chopped cabbage, ground pork, chopped onion, grated ginger, soy sauce, sesame oil, salt, and black pepper.
  2. Mix thoroughly until all ingredients are well combined.
Assemble the Dumplings
  1. Divide the dough into small, equal portions and roll each into a thin circle.
  2. Place a spoonful of filling in the center of each dough circle, then fold and crimp the edges to seal, forming a dumpling shape.
Cook the Dumplings
  1. Bring a large pot of salted water to a rolling boil and carefully drop in the dumplings.
  2. Cook for 5-7 minutes, or until the dumplings float to the surface and are cooked through.
Serve
  1. Drain the cooked dumplings and transfer them to a serving platter.
  2. Mix soy sauce, rice vinegar, and chili oil for a dipping sauce and garnish the dumplings with chopped green onions before serving.

Notes

For extra flavor, you can pan-fry the cooked dumplings until golden brown on one side. Adjust the spice level of the chili oil to your preference. These dumplings can be made ahead of time and frozen for later. Just boil them directly from frozen, adding a few extra minutes to the cooking time.
