  • 4 tbsp Butter
  • 4 tbsp All-purpose flour
  • Salt to taste
  • Black pepper to taste

Preparation
  1. In a large pot, melt butter over medium heat. Add chopped onion and grated carrot, sautéing until softened, about 5-7 minutes.
Cooking
  1. Stir in flour and cook for 1 minute, ensuring no lumps remain. Gradually whisk in broth until smooth, then add milk, bringing the mixture to a gentle simmer.
  2. Add broccoli florets to the simmering liquid. Cook for 10-15 minutes, or until the broccoli is tender.
  3. Remove from heat and stir in shredded cheddar cheese until fully melted and creamy. Season with salt and pepper to taste.

Notes

For a smoother soup, you can use an immersion blender to blend a portion of the soup before adding the cheese. Adjust seasoning as needed.
