Ingredients
  

Cookie Dough
  • 1/2 cup Unsalted butter softened, room temperature
  • 1/4 cup Granulated sugar
  • 1 Egg yolk large
  • 1/2 tsp Vanilla extract
  • 1 1/4 cups All-purpose flour
  • 1/4 cup Almond flour
  • 1/4 tsp Salt
  • 1/2 tsp Lemon zest optional
Filling and Dusting
  • 1/4 cup Raspberry jam or desired flavor
  • Powdered sugar for dusting

Method
 

Prepare the Dough
  1. Cream butter and granulated sugar together in a mixing bowl until the mixture is light and fluffy.
  2. Beat in the egg yolk and vanilla extract, then stir in the lemon zest if you are using it.
  3. In a separate bowl, whisk together the all-purpose flour, almond flour, and salt; gradually add this dry mixture to the wet ingredients until just combined.
  4. Divide the dough in half, flatten each portion into a disk, wrap them in plastic, and chill for at least 30 minutes.
Bake the Cookies
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. On a lightly floured surface, roll out one disk of dough to an 1/8-inch thickness, then cut out 5 full circles and 5 circles with a small center cut-out using your cookie cutters.
  3. Carefully transfer the cut-out cookies to the prepared baking sheets and bake for 10-12 minutes, or until the edges are lightly golden.
  4. Let the baked cookies cool on the baking sheets for a few minutes before moving them to a wire rack to cool completely.
Assemble Cookies
  1. Once cooled, dust the cookies with the center cut-outs with powdered sugar.
  2. Spread a thin layer of raspberry jam onto the flat side of each full cookie.
  3. Carefully place a powdered sugar-dusted cookie on top of each jam-covered cookie to form a sandwich.

Notes

For best results, ensure your butter is at room temperature. Don't overwork the dough to keep the cookies tender. Any berry jam can be used for the filling.
