Preparation
- Slice the beef flank or skirt steak thinly against the grain; then, in a bowl, mix olive oil, lime juice, chili powder, cumin, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper for the marinade.
- Add the beef strips to the marinade, tossing to coat evenly, and let it marinate for at least 30 minutes, or up to 4 hours, in the refrigerator.
Cooking
- Slice the bell peppers and onions into thin strips while the beef marinates.
- Heat a large skillet or cast-iron pan over medium-high heat with a little oil, then cook the marinated beef in batches until browned and cooked through, approximately 3-5 minutes per batch, and set aside.
- In the same pan, add more oil if necessary and cook the sliced bell peppers and onions until they are softened and slightly charred, about 5-7 minutes.
- Return the cooked beef to the pan with the vegetables, tossing to combine and heating through for about a minute.
- Warm the tortillas according to their package directions using a microwave, oven, or skillet.
Serving
- Serve the beef and vegetable mixture immediately with warm tortillas and your preferred toppings like sour cream, salsa, or guacamole.
Notes
For best flavor, marinate the beef for at least 2 hours. Adjust the amount of cayenne pepper to your spice preference. Don't overcrowd the pan when cooking the beef to ensure it browns properly instead of steaming.
