Tomato Soup
- Roast the tomatoes, onion, and garlic at 400°F (200°C) for 20-25 minutes until softened and slightly charred. Blend the roasted vegetables with vegetable broth and fresh basil until smooth.
- Simmer the blended soup in a pot for 15-20 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
Grilled Cheese
- Assemble the sandwiches with cheese between two slices of bread. Butter the outside of the bread.
Combine
- Cook the sandwiches in a non-stick pan over medium heat for 3-4 minutes per side, until golden brown and the cheese is melted. Serve the grilled cheese alongside the hot tomato soup.
Notes
For an extra creamy soup, add a splash of heavy cream or coconut milk during the simmering stage. Experiment with different cheeses for your grilled cheese to find your favorite combination.
