- Heat olive oil in a large pot or Dutch oven over medium heat, then add diced carrots, celery, and onion and sauté until softened (about 5-7 minutes).

Notes
For a thicker soup, you can mash a portion of the cannellini beans before adding them. Adjust broth quantity to achieve your desired consistency. This recipe can be easily made vegetarian by using vegetable broth instead of chicken broth.
