  • 2 cans cannellini beans rinsed and drained
  • 1 can crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 2 cloves minced garlic
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • salt to taste
  • black pepper to taste
  • Parmesan cheese for serving (optional)

Equipment

  • Large pot or Dutch oven

Method

Preparation
  1. Heat olive oil in a large pot or Dutch oven over medium heat, then add diced carrots, celery, and onion and sauté until softened (about 5-7 minutes).
  2. Stir in minced garlic, dried oregano, and dried basil, cooking for another minute until fragrant.
  3. Pour in the chicken or vegetable broth and crushed tomatoes, then bring the mixture to a simmer.
  4. Add the cannellini beans and ditalini pasta, stirring well, and cook according to pasta package directions until the pasta is al dente (usually 8-10 minutes).
Finishing Touches
  1. Season with salt and black pepper to taste, adjusting as needed.
  2. Serve hot, garnished with grated Parmesan cheese if desired.

Notes

For a thicker soup, you can mash a portion of the cannellini beans before adding them. Adjust broth quantity to achieve your desired consistency. This recipe can be easily made vegetarian by using vegetable broth instead of chicken broth.
