  • 1/2 cup boiling water

Instructions
  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a large bowl, whisk together the sugar, eggs, milk, vegetable oil, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Carefully stir in the boiling water until the batter is smooth.
  6. Fill each muffin cup about two-thirds full with batter and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra rich chocolate flavor, use Dutch-processed cocoa powder. Do not overmix the batter to ensure moist cupcakes.
