  • 1 tbsp cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • 1.5 tbsps salt
  • 0.5 tsp black pepper

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat, then drain any excess fat.
  2. Add the chopped onions and minced garlic to the pot, cooking until softened, about 5-7 minutes.
  3. Stir in the chili powder, cumin, paprika, and oregano, cooking for another minute until fragrant.
  4. Pour in the diced tomatoes (undrained), kidney beans (rinsed and drained), tomato paste, and beef broth.
  5. Bring the mixture to a simmer, then reduce heat to low, cover, and let it cook for at least 1 hour, or up to 2 hours, stirring occasionally.
  6. Season with salt and black pepper to taste before serving hot.

Notes
