  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter, cold and cubed
  • 0.5 cup ice water
  • 1 tablespoon sugar
  • 0.5 teaspoon salt
For the Filling
  • 6 medium apples, peeled, cored, and sliced
  • 0.75 cup granulated sugar
  • 1 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons all-purpose flour
For Assembly
  • 1 egg, beaten for egg wash
  • 1 tablespoon turbinado sugar for sprinkling

Method
 

Prepare the Crust
  1. In a large bowl, whisk together the flour, sugar, and salt, then cut in the cold butter until the mixture resembles coarse crumbs.
  2. Gradually add ice water, mixing until a dough forms, then divide it in half, flatten into discs, wrap, and chill for 30 minutes.
Make the Filling
  1. Combine sliced apples with sugar, cinnamon, nutmeg, lemon juice, and flour in a bowl, mixing until the apples are evenly coated.
  2. Ensure all ingredients are well distributed to create a flavorful and thickened filling.
Assemble and Bake
  1. On a floured surface, roll out one dough disc and carefully transfer it to a 9-inch pie plate, trimming any excess and leaving an overhang.
  2. Pour the apple filling into the pie crust, then roll out the second dough disc and place it over the filling.
  3. Trim, crimp the edges to seal, cut vents in the top, brush with egg wash, and sprinkle with turbinado sugar.
  4. Bake at 400°F (200°C) for 45-55 minutes, or until the crust is golden brown and the filling is bubbly and tender.

Notes

For best results, use a mix of sweet and tart apples like Granny Smith and Honeycrisp. If the crust browns too quickly, cover the edges with foil. Allow the pie to cool completely before slicing for cleaner cuts.
