Preparation
- In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
- In a separate bowl, whisk together the milk, egg, and vegetable oil (or melted butter).
Cooking
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix, as a few lumps are okay.
- Heat a lightly oiled griddle or non-stick pan over medium heat; pour about 1/4 cup of batter per pancake onto the hot surface.
- Cook for 2-3 minutes per side, or until golden brown and cooked through, using only three flips: one to check for doneness, a second to flip, and a third to check for the other side.
Notes
For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking. Serve immediately with your favorite toppings like syrup, fruit, or whipped cream.
