  • 1 cup cottage cheese
  • 2 eggs
  • 1/2 cup flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tbsp butter for cooking

Method
 

Preparation
  1. In a large bowl, mash the cottage cheese with a fork until mostly smooth.
  2. Add the eggs, flour, sugar, baking powder, vanilla extract, and salt to the bowl and mix until just combined.
  3. Do not overmix; a few lumps are okay.
Cooking
  1. Heat a non-stick skillet or griddle over medium heat and melt the butter.
  2. Pour 1/4 cup of batter per pancake onto the hot surface, leaving some space between each.
  3. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  4. Repeat with the remaining batter, adding more butter to the skillet if needed.
Serving
  1. Serve the pancakes warm with your favorite toppings, such as fresh fruit, syrup, or whipped cream.

Notes

For extra flavor, you can add a pinch of cinnamon or nutmeg to the batter. These pancakes are also great for meal prep; simply store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in a toaster or microwave.
