Preparation
- In a large bowl, mash the cottage cheese with a fork until mostly smooth.
- Add the eggs, flour, sugar, baking powder, vanilla extract, and salt to the bowl and mix until just combined.
- Do not overmix; a few lumps are okay.
Cooking
- Heat a non-stick skillet or griddle over medium heat and melt the butter.
- Pour 1/4 cup of batter per pancake onto the hot surface, leaving some space between each.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Repeat with the remaining batter, adding more butter to the skillet if needed.
Serving
- Serve the pancakes warm with your favorite toppings, such as fresh fruit, syrup, or whipped cream.
Notes
For extra flavor, you can add a pinch of cinnamon or nutmeg to the batter. These pancakes are also great for meal prep; simply store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in a toaster or microwave.
