Ingredients

Main Ingredients
  • 1 tablespoon olive oil
  • 1 cup yellow onion about 1 medium
  • 2 garlic minced
  • 2 carrots peeled and diced
  • 2 celery stalks diced
  • 4 cups chicken broth
  • 2 cups half-and-half
  • 1 cup cooked chicken shredded or diced
  • 1 (16 ounce) package potato gnocchi
  • 1 cup fresh spinach chopped
  • ½ teaspoon dried thyme
  • Salt and black pepper to taste
  • Freshly grated Parmesan cheese for serving (optional)

Equipment

  • Large pot or Dutch oven
  • Ladle

Method

Preparation
  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, garlic, carrots, and celery, then cook until softened, which usually takes about 5-7 minutes.
Cooking
  1. Pour in the chicken broth and bring it to a simmer, cooking for 10-15 minutes until the vegetables become tender.
  2. Reduce the heat to low, then stir in the half-and-half and cooked chicken, heating until warm but ensuring it does not boil.
  3. Gently stir in the potato gnocchi and chopped spinach, cooking for 2-3 minutes until the gnocchi float and the spinach wilts.
Serving
  1. Season the soup with dried thyme, salt, and pepper to taste. Ladle the soup into bowls and serve, optionally garnished with freshly grated Parmesan cheese.

Notes

For a thicker soup, create a slurry with 1 tablespoon of cornstarch mixed with 2 tablespoons of cold water and stir it into the soup in step 3. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; gnocchi may absorb liquid so add a splash of milk or broth when reheating. Feel free to adjust spinach or add other vegetables like corn or peas. To make it vegetarian, omit chicken, use vegetable broth, and consider adding cannellini beans for protein.
