Making the Pie Crust
- In a large bowl, combine flour and salt, then cut in very cold butter until it forms pea-sized crumbs.
- Gradually add ice water, mixing until the dough just comes together, then divide it in half, flatten into discs, wrap, and chill for at least 30 minutes.
Preparing the Apple Filling
- In a large bowl, combine sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice, ensuring the apples are evenly coated.
- Taste a small piece of apple mixture and adjust consistency, sweetness, or spice levels if needed.
Assembling the Pie
- On a lightly floured surface, roll out one pie dough disc into a 12-inch circle and carefully transfer it to a 9-inch pie plate.
- Pour the apple filling into the crust, dot with butter pieces, then roll out the second dough disc and place it over the filling.
- Trim the edges, crimp them to seal, cut vents in the top crust, and if desired, brush with egg wash.
- Preheat the oven to 425°F (220°C), place the pie on a baking sheet, and bake for 15 minutes, then reduce heat to 375°F (190°C) and bake for another 45-50 minutes until golden.
- Allow the pie to cool completely on a wire rack before serving to allow the filling to set.
Notes
For best results, use a mix of tart and sweet apples. If the crust starts browning too quickly, you can cover the edges with foil. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream!
