  • 2 tbsp Olive oil
  • 1 Yellow onion diced
  • 2 Carrots diced
  • 2 Celery stalks diced
  • 3 cloves Garlic minced
  • 28 oz Crushed tomatoes
  • 6 cups Vegetable broth
  • 2 cans Cannellini beans 15 oz each, rinsed and drained
  • 1 cup Ditalini pasta
  • 1 sprig Fresh rosemary chopped
  • 1 sprig Fresh thyme chopped
  • Salt to taste
  • Black pepper to taste
  • Parmesan cheese for serving, optional

Method
 

Cooking Steps
  1. Heat olive oil in a large pot or Dutch oven over medium heat, then add diced yellow onion, carrots, and celery; cook until the vegetables are softened, about 5-7 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant, then add the crushed tomatoes and let simmer for 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth and add the rinsed and drained cannellini beans; bring the mixture to a boil, then reduce the heat to low and simmer for 15-20 minutes to allow the flavors to meld.
  4. While the soup simmers, cook the ditalini pasta according to package directions in a separate pot of salted boiling water until al dente; drain the pasta once cooked.
  5. Add the cooked ditalini pasta to the soup base, along with the chopped fresh rosemary and thyme. Stir well and season the soup with salt and black pepper to taste.
  6. Ladle the hot Pasta e Fagioli into individual bowls. For an extra touch, garnish with grated Parmesan cheese before serving, if desired.

Notes

For extra flavor, use homemade chicken or vegetable broth. You can also adjust the consistency of the soup by blending a portion of the beans before adding them back to the pot, or by adding more broth if you prefer a thinner consistency.
