Preparation
- Prepare all ingredients for each salad by washing, chopping, and measuring as specified for each recipe.
- For the basic salad components, combine mixed greens, halved cherry tomatoes, diced cucumber, sliced bell pepper, and thinly sliced red onion in a large bowl. Divide this mixture into 7 equal portions, one for each individual salad.
Assemble Salads
- For Salad #1 (Mediterranean Quinoa Salad): To one portion of the basic salad mix, add cooked quinoa, rinsed chickpeas, crumbled feta cheese, and halved Kalamata olives.
- For Salad #2 (Berry Spinach Salad): To another portion, add fresh spinach, sliced strawberries, blueberries, and candied pecans.
- For Salad #3 (Corn and Avocado Salad): Combine a portion of the basic salad with corn kernels, diced avocado, minced red onion, and chopped cilantro.
- For Salad #4 (Asian Noodle Salad): Mix a portion with cooked soba noodles, shredded carrots, shelled edamame, and sesame seeds.
- For Salad #5 (Watermelon Feta Salad): Add cubed watermelon, crumbled feta cheese, and chopped fresh mint to a portion of the basic salad.
- For Salad #6 (Caprese Salad): Combine a portion with halved fresh mozzarella balls, halved cherry tomatoes, and fresh basil leaves.
- For Salad #7 (Green Bean and Potato Salad): Mix the last basic salad portion with cooked green beans, halved baby potatoes, and Dijon mustard.
Prepare Dressing
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey or maple syrup, salt, and black pepper until well combined.
Serve
- Drizzle each individual salad with the vinaigrette dressing just before serving. Enjoy your healthy and diverse summer salads!
Notes
Feel free to customize the ingredients based on your preferences and what's in season. You can also prepare the ingredients ahead of time and assemble the salads just before serving to maintain freshness. Consider adding grilled chicken or fish for extra protein in any of these salads.
