  • 1 pint Cherry tomatoes halved
  • 1 large Cucumber diced
  • 1 large Bell pepper sliced
  • 0.5 medium Red onion thinly sliced
Salad #1: Mediterranean Quinoa Salad
  • 1 cup Cooked quinoa
  • 0.5 can Chickpeas rinsed and drained
  • 0.25 cup Feta cheese crumbled
  • 0.25 cup Kalamata olives halved
Salad #2: Berry Spinach Salad
  • 1 cup Fresh spinach
  • 0.5 cup Strawberries sliced
  • 0.25 cup Blueberries
  • 2 tbsp Candied pecans
Salad #3: Corn and Avocado Salad
  • 1 cup Corn kernels fresh or frozen and thawed
  • 1 medium Avocado diced
  • 2 tbsp Red onion minced
  • 2 tbsp Cilantro chopped
Salad #4: Asian Noodle Salad
  • 1 cup Cooked soba noodles
  • 0.5 cup Shredded carrots
  • 0.5 cup Edamame shelled
  • 1 tsp Sesame seeds
Salad #5: Watermelon Feta Salad
  • 1 cup Watermelon cubed
  • 0.25 cup Feta cheese crumbled
  • 2 tbsp Fresh mint chopped
Salad #6: Caprese Salad
  • 0.5 cup Fresh mozzarella balls small, halved
  • 0.5 cup Cherry tomatoes halved
  • 0.25 cup Fresh basil leaves
Salad #7: Green Bean and Potato Salad
  • 1 cup Cooked green beans
  • 1 cup Cooked baby potatoes halved
  • 1 tbsp Dijon mustard
Vinaigrette Dressing (for all salads)
  • 0.5 cup Olive oil
  • 0.25 cup Red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp Honey or maple syrup
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Method
 

Preparation
  1. Prepare all ingredients for each salad by washing, chopping, and measuring as specified for each recipe.
  2. For the basic salad components, combine mixed greens, halved cherry tomatoes, diced cucumber, sliced bell pepper, and thinly sliced red onion in a large bowl. Divide this mixture into 7 equal portions, one for each individual salad.
Assemble Salads
  1. For Salad #1 (Mediterranean Quinoa Salad): To one portion of the basic salad mix, add cooked quinoa, rinsed chickpeas, crumbled feta cheese, and halved Kalamata olives.
  2. For Salad #2 (Berry Spinach Salad): To another portion, add fresh spinach, sliced strawberries, blueberries, and candied pecans.
  3. For Salad #3 (Corn and Avocado Salad): Combine a portion of the basic salad with corn kernels, diced avocado, minced red onion, and chopped cilantro.
  4. For Salad #4 (Asian Noodle Salad): Mix a portion with cooked soba noodles, shredded carrots, shelled edamame, and sesame seeds.
